I simply do the following:
1. Rinse the seeds thoroughly.
2. Spread them out on an aluminum foil covered cookie sheet
3. Sprinkle lightly with salt
4. Bake in 300 degree oven until golden brown. This can take 10 to 20 minutes depending on the oven. I start checking after about 8 minutes just to make sure they don't burn (too much). I actually prefer them quite crispy - which means dark brown around the edges.
I used to coat lightly in oil or use PAM or someother spray, but have found that that doesn't really improve the test - so why not keep it simpler and healthier?
You can also try frying them in a fry pan with some Soy Sauce - very yummy.
