Plus lots of Russian Cafes along Leetsdale / Parker road through Denver and Glendale
Well, there's a great many to choose from. It's going to be really difficult to narrow it down for you, since you didn't list a specific type of restaurant or price range. Some of my personal favorites..
Tocabe: An American Indian Eatery
3536 W. 44th Avenue
Denver, CO 80211
(303) 525-8282
Entrees range from $10 - $18, they do (American) Indian fry bread tacos, stuffed fry bread, buffalo ribs.. great stuff. They were featured on Guy Fieri's Diners, Drive-Ins, and Dives.
Jai-Ho Indian Kitchen
3055 South Parker Rd. #103
Aurora, CO 80014
(303) 751-5151
Many of the dishes served in most Indian restaurants in the US are actually dishes which were an amalgamation of Indian and British or Portuguese cuisine (e.g., Tikka Masala and Korma are largely British influenced, while Vindaloo is largely Portuguese infleunced). Jai-Ho is a bit more authentic Indian Food. But if you don't handle spicy food well, be forewarned - this place does not do "mild".
Buckhorn Exchange
1000 Osage St.
Denver, CO 80204
(303) 534-9505
If you have a hole in your pocket (this is not a cheap place to eat, whatsoever), the Buckhorn Exchange serves a variety of wild game and domesticated meats. Having been in existence since the 1890s, it's something of a tourist trap in its own rite, the walls being adorned with various stuffed animal heads (including a two headed sheep), old rifles and other novelties from the Old West.
The Bagel Deli
6439 East Hampden Ave.
Denver, CO 80222
(303) 756-6667
Another one which was featured on Diners, Drive-Ins, and Dives, though, in all honesty, I really don't understand what made is so unique from any other Jewish deli to be featured on that show. But that's not to say it isn't good - I like it a lot, personally, and they make really good food. A fair word of warning - they have their appearance on Diners, Drive-Ins, and Divesplaying on a loop, and it can be a bit obnoxious at times.
Zaidy's
121 Adams Street
Denver, CO 80206
(303) 333-5336
Another Jewish deli, also conveniently located next to a cupcake shop called Big Fat Cupcake. Very family-oriented atmosphere. Though their appetizers can be a meal in themselves.
D-Bar Restaurant
1475 E. 17th Ave.
Denver, CO 80218
(303) 861-4710
Also known as D-Bar Desserts. A little higher end dining. While the restaurant is famous for their desserts and is often attended for that sole purpose, they also make some excellent entrees (including a very unique spin on chicken and waffles which I'm starting to crave now as I post this).
Union American Bistro
3 Wilcox Street
Castle Rock, CO 80104
(303) 688-8159
Castle Rock is located a little ways south of Denver, but I had to include this one. The menu is small, but what they do, they do well. If you don't traveling just slightly outside the Denver Metro area, I'd highly recommend this one.
Little India
330 E. 6th Ave.
Denver, CO 80203
(303) 871-9777
Another Indian restaurant, this one being probably a bit more oriented towards a Western palate.
Lucille's Creole Cafe
275 South Logan St.
Denver, CO 80209
(303) 282-6258
Lucille's has two locations - one in Denver, and one in Boulder. Both are good, but I'd recommend the Denver location over the Boulder location. IIRC, Lucille's closes at 2 p.m., so you have to make sure to get there on time. They have a strong emphasis on Louisiana-style food, and a lot of it seems pretty authentic. Not cheap, but delicious.
Cherry Cricket
2641 E. 2nd Ave.
Denver, CO 80206
(303) 322-7666
My favorite burger joint of all time! Due to a lack of time, I can't really get into too much detail, but if you're just looking for burgers, chicken Sandwiches, etc., that's the place to go.
I could pretty much write a small book on the subject if I continued on, but I hope this is helpful to you. If you have further questions, or are looking for something specific, you're free to e-mail me (address is listed on my bio page).
If you're near a Hare Krishna ISKCON temple, go there. They'll have a Govinda's restaurant. The most exquisite food!!!! yum...pure veg

The best vegetarian restaurants in the US are somewhat a matter of opinion. Some of the top rated restaurants include Angelica Kitchen and Cafe Gratitude in Los Angeles.
