Fats and oils are made from glycerol and three fatty acids joined by dehydration synthesis. Also known as triglycerides.

Naturally occurring fats, oils and waxes are collectively known as simple lipids.

Oils and fats are exposed to warm and moist air for a long time, they give off bad smells and odors. This is known as Rancidification.

Naturally occurring esters of long-chain carboxylic acids with long chain alcohols are waxes. Waxes are low melting point solids.

Hydrogenation. Carbon chains with more hydrogens attached are single bonded and these are solid fats. When carbon double bonds it kinks and also less hydrogens bond. This allows for packing that is not tight, as in the case of single bonds, so the molecule is liquid at room temp.

Fixed Oils (as opposed to essential oils) are generally of vegetable origin and are extracted from seeds or nuts. There are various methods of extraction: unrefined, cold pressed, expeller pressed, and refined.

AFAIK, Fats are most often associated with being of animal origin (there are exceptions ie: palm/coconut/shea) and are solid at room temperature.
