Functional departments are the higher level departments, such as Sales, under which sub-departments like Field Sales for example fall.
A new trend in housekeeping departments is brightly colored kitchen appliances. Keep your eyes out for bring red, blue, and green mixers, blenders, and coffee makers.
I'm sure different hotels have different departments and sub-departments within each, but some standard departments are Front Office/Guest Services, Housekeeping, General Management, Stewarding, Food & Beverage, Banquets, Sales, Accounting, Security, Purchasing, PR/Marketing, HR. Higher end hotels may also have Recreation & Sport Mangement (e.g. Golf, Tennis), Spa Management, Retail Shop Management, Membership Department.
I don't know all of them. But there is the pharmacy, respiratory, anesthesiology, physical therapy, RN, doctors, emergency, surgery, oncology, laboratory, volunteer, housekeeping, and X-ray departments.

Many larger hotels have folding machines for sheets in their housekeeping departments, if they still do their own laundry. Some hotels have their sheets sent out to be cleaned. The smaller hotels today still have washers and dryers, but the housekeeping staff folds the sheets and towels.
In those departments which are divided into several precincts or sub-districts (usually larger agencies) it is usually based on population distribution.
