Before gladiators fought a match they chose from a hat the set of weapons that they would use. There were 3 sets. The first set was a spear and a helmet . The second set was a net (that could be thrown to capture the other gladiator) and a trident. The last set was a sword and a shield with a helmet. These are the weapon sets that they to chose from.
Gladiators were matched by their style of fighting. It was rare for a combat to be between two fighters using the same style and weapons. For example, a Thracian or Thrax would be matched against a Myrmillo and a Secutor against a Retiarius. The gladiators were distinguished and so received their names, for the weapons they used, their armor and their helmets.
Mostly metals, although spears/tridents would have wooden shafts. In addition, the net of the Retiarii was of course made out of material. Bronze may have made an appearance, but by far the dominant metal was iron. Later gladiators may have even had weapons made of an early form of steel.
