Just about anything you want. Paella's main ingredient is rice. Most Paella dishes have some sort of meat like chicken or fish/shellfish or pork or sausage and vegetables like peas, red peppers, green peppers, onions, green bean, butter beans, garbanzos (chick peas), tomatoes and garlic in some combination depending on the meat.
