French onion soup is a onion & beef broth based soup with croutons and cheese First you make your broth. The easy way is with a beef base and then mix with water. You need to slice the onions and carmellize them in a pan. This means that you cook them with nothing in the pan at all, ie.no butter or oil. You turn them so they do not burn. You want a dark brown color. This will take about 15 minutes, give or take a few minutes. The broth will take about an hour. You can additems to boil but you must strain them out before adding the onions. You would do this for flavor only. Depending on how much you are making will depend on how much sherry you will add to the broth just before the onions. You want just enough to be able to taste the nutty flavor, very faint taste. You add the onions and cook on low heat for at least 10 minutes and serve. You may add croutons and top with a white cheese and melt in the oven and then serve hot. I would suggest homemade croutons with no herbs added, only lightly toss with extra virgin olive oil and bake them. Enjoy The recipe I use at the restaraunt is start by carmalizing the onions. Cook them till they are a deep brown colour. Deglaze the pot with a splash of red wine and continue cooking until all you can smell is the wine and not the alcohol. Add water and a pinch of garlic powder and continue to simmer at medium heat. then add your beef base.

1 loaf French bread, cut into 12 slices
1 cup shredded Swiss cheese
2 tablespoons shredded Parmesan cheese
