This sounds like an interview. I would look for anyone who is obviously Computer literate and has extensive knowledge of the software. They must also be easy to work with and be able to communicate on different planes of explanation.
Wait staff should be well-groomed (short, clean fingernails, hair short and tidy, clothes clean), should speak clearly in a friendly warm voice, should not be overly personal or ingratiating yet...
