Top of my list would be the Kea, an alpine parrot that is probably the world's most intelligent bird. But parrots are normally pretty clever.
Next would be the Southern Royal Albatross, a magnificent flying sea bird with a wingspan of about 3m (10ft). [They spend a long tome at sea after fledging, and land on the water using their feet as brakes. Upon their first return to land, they are easy to catch, for they once again attempt to use their feet as brakes - which results in a nose plant! They can then be easily handled for attaching ID bands to their legs.]
And my #3 would be the seals, particularly the pups, which gather and play in a nursery group. Rather cute. They are not confined to NZ of course.
Belatedly I must add the Tuatara, an international icon of long ago, and the 'Velvet worm' the Peripatus.
