Generally, calves. A single "young cattle" is called a calf.

Calves are called calves from birth until weaning. Past weaning, they are generally known as "weaners" or weaned calves. Some producers continue calling these young cattle calves even after weaning, but the term is dropped once they approach a year of age, be they short (8 to 10 months old) or long (13 to 16 moths old) yearlings.

More specifically, they can also be called bull calves if they are intact young male bovines, steer calves if they're castrated young males, or heifer calves which are young female calves.

A young ox. Oxen are male, as they are pretty much steers with horns that have been trained to pull carts and wagons.
