The bacteria 'Salmonella' is what causes food poisoning in meats. Poultry and fish are well known for causing food poisoning if the Poultry and fish have not been handled well or left out too long once cooked.

The bacteria that cause food poisoning (E. Coli, Samonella) are already found on the food that you buy, but in amounts too small to hurt you. When food "Spoils", it is because the Bacteria have reproduced into quantities that are SIGNIFICANT. Warm tempertures contribute to the growth of bacterial colonies.

Cooking above temps of 160o F, refrigeration or freezing, all increase the amount of time that it takes for food to Spoil.
