I disagree. These days there are lots of flour substitutes in Health Food Stores and Websites for gluten-free recipes and/or Celiac Disease Websites, and even in large grocery stores. Potato flour, Tapioca flour, Pea Flour and Hempseed flour are examples. I have also used combinations of Rice Protein powder plus ground Flaxmeal plus ground Almond meal. Delicious and highly nutritious combination! Any protein powder could be used instead of Rice Protein, such as Whey Protein powder or Soy Protein Powder. I also use this combination to make muffins, along with lots of eggs to hold it together. But the flours are easy to use & packages include recipes. There are also great blogs by people who can't use wheat flour.
