You can substitute 1/4 cup coconut milk for every egg. But be careful of overwhelming the brownies with coconut flavor, unless you like coconut.
Puree 1 tablespoon of flaxseed with 1/4 cup water per egg. This helps to bind ingredients like eggs do.
Or you can try a 1/4 cup of applesauce per egg.
