Goldfish change color for one of two reasons. The first is a lack of sunlight, which ends up retarding the pigmentation cells in the fish's scales that are responsible for color. This causes a fish to become lighter or white in color. The second reason is for a darkening in scale color. This is because due to irritation of the skin the fish's body releases a chemical called leukine which stimulates color pigmentation cells. Especially melanophores (black pigmentation cells) thus causing the fish to have abnormally high amount of black pigmentation.

It's all about where the tank is. For example, if you put a goldfish in its tank in a room with no light, it would turn white.

If your fish has changed colour, it's simply getting used to the light change from the shop/supplier to your home.

My goldfish went completely white because of shock. it slowly changed colors but now it's just like my other two. It got stuck in one of it's toy swim through things and we had to get a friend of mine to help us get him out. he lost a bunch of scales then went completely white over the next two months.

Goldfish develop from their ova as drab, greyish, silvery, sometimes brownish, little fish. As they grow and mature their true colours start to show and they eventually develop into their magnificently coloured adulthood. If given bad water conditions, or poor food, or poor lighting, their colours may fade. I'm sure you will have heard of the expression "Off colour" well in the case of a goldfish it is quite obvious when they are "Off colour".

I've heard that if you put your goldfish in a dark place, it will no longer be shiny, so I guess brightness keeps the goldfish bright!
