You can dip the fish in beaten egg mixed with a little milk or buttermilk, then roll it in flour, dry pancake mix or cornmeal. There are also lots of recipes for batter-dipped fish, but here is a basic and simple recipe.
Ingredients:
3/4 cup flour
2 tablespoons cornstarch
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup water
Procedure:
Whisk together dry ingredients in a bowl.
Add water and mix well.
Dip fish into the batter, coating thoroughly.
Drain off excess batter and drop in hot oil.
Deep fry until a nice golden brown. (Fish will float when it's done)
This breading recipe can also be used for deep-frying chicken, shrimp, or most anything you want breaded and deep-fried.

Deep frying
Before foods are deep-fried or pan-fried, they are normally smothered in a dry or wet coating. Dry coatings are often referred to as "breadings" since they frequently, but certainly not always, include the use of bread crumbs. Wet coatings are called batters. Breadings can be used when deep-frying or pan-frying. Batters are exclusive to deep-frying.

Cast iron, if properly seasoned and cared for, is excellent for cooking and baking (cornbread, pineapple upside down cake, etc.) because trace iron is conveyed to the food. You can use an iron pot for frying, but it is unlikely that the benefits will be transfered through the hot oil into the fish. You can use any heavy, deep pot for frying. Make sure you have at least as much pot above the oil as below to allow for the addition of food and to keep spatters to a minimum.
it takes much longer because they use water in boiling and oil in deep frying

A chip pan is used for deep frying. Most commonly they are used for frying chips (french fries) but are rapidly being replaced by deep fat fryers due to safety concerns.
