Dogs like most smells; they shy away from smells that they perceive as dangerous or unnatural (e.g. alcohol, solvents, etc.), and most dogs will shy away from the smell of their own feces. Anything that a dog sniffs and immediately moves away from should be regarded as toxic or poisonous to the dog and should not be used to train the dog.

In terms of using unpleasant smells as a part of Dog Training, e.g. in a spray bottle, it's important to use safe products that, while unpleasant to the dog, will not harm the dog. One common product is Bitter Apple, for instance. Some dog trainers will use diluted vinegar as well.

Dogs do not like to smell cayenne pepper, coffee grounds, pipe tobacco, lavender oil, lemon grass oil, citronella oil, peppermint oil, eucalyptus oil, and mustard oil. Although each individual will react differently to said smells listed above. Additionally, please ensure you only use the products above for training purposes. Abusing animals can, and will result in jail time.
