It's an odd question, because it would vary by location and individual, but many people at the time slept on piles of hay, as it was inexpensive, easy to change and reasonably comfortable.

Others may sleep on wood or stone with cloth for padding. Those who were very wealthy may have a mattress made of down (bird feathers) or even of various kinds of animal fur.
