What do you call people who speak more than one language?

Bi-lingual

The term bilingual refers most frequently and more specifically to a person who speaks two languages. A person who speaks more than two, who is, in effect, multilingual, is polyglot. The terms apply to communities and populations as well as to individual people. Thus, a community in which, for example, Spanish and English are almost equally prevalent is a bilingual community. One in which several languages are noticeable and influential is multilingual or polyglot.
