The letters themselves usually don't mean anything.
Those that do mean something are usually in Italian or French.
Examples: GT=Gran Turismo and denotes a more powerful version
GTI=Gran Turismo Internazionale, a variation on GT
GL=Grand Luxe, a luxury model.
In actual practice, each manufacturer has its own letter designations. Those you list are used by General Motors and mean the following:
LS: a lightly gussied-up base model with things like a/c, bucket seats, and different wheels.
LT: Similar to an LS, but with a bit more of everything (ex. nicer sound system).
LTZ: A lot more standard equipment and a bigger motor not available in the other models.

The best place to find a Chevy Tahoe LTZ would be a Chevy dealership. Or, one could check out a site such as AutoTrader, which would list vehicles for purchase.
