It is all to do with osmosis:

If you have two areas and one has a high salt concentration then the water will balance out the concentration. So if you have loads of salt in your bloodstream then all the water from your cells will be sucked out and you will die. Simple as.

To stop you from dieing your two kidneys work to remove the salt from your bloodstream. If you eat too much salt your kidneys get overworked and could fail.

If your kidneys fail then you either:
a - Go to the hospital once a week for several hours while a machine filter salt from your bloodstream, you spend all your life feeling tired because of the high salt levels in your blood.

b - You get an device fitted into your chest which acts like the kidneys but not as well. You still need to watch your diet and will always be bloated and feel tired.

c - Die, it's not funny, you really would.
