I assume the question is "What food DID African American slaves eat?" As in the history of slave consumption in America's past. The general answer is that what they ate came from very few sources: 1)Whatever was castoff from the slave owner's food stuffs - ie the parts of animals that were usually thrown away as garbage were instead given to slaves. Or, hungry and desperate, slaves would eat things that actually were discarded by the slave owner, which the slaves reclaimed from the garbage heap. These castoffs consisted largely of the remains of pigs. 2)If a slave worked in the main house, they might be able to eat the leftovers or castoffs from the table of the slave owner after the White family had eaten their fill. But this was only if the food was not to be saved or put aside for another meal, and only if the slave owner said it was ok. (Some owners as an additional act of cruelty would give the leftover food to the dogs rather than allow the slaves to eat it) 3)In some places a slave owner might allow slaves to farm small (I str.ess small) plots of land near the slave quarters to grow whatever they could to eat. They could only tend these plots when not doing work for the slave and/or plantation owner - meaning a few minutes before going to work at dawn and perhaps for a bit in the dark before sleep but after making food for the next day. If a slave owner gave them Sunday's off (some did, some did not), they could work on the garden then. But the truth is there wasn't much if any free time! Their days consisted of rising before dawn and sleeping well after dark, and Sunday had to be used to do all left undone during the week (including things like mending the little clothing they had, and grinding corn for meals). 4) Corn Meal was a large part of the slave diet. Because corn could be grown so often and during off season for other crops, it was often grown in large quantities. When not working, Slaves would have to take the the corn and grind it up into smaller pieces/grains by hand making it corn meal. A frequent "meal" made from this was a mix of the cornmeal with water which was then placed under the ashes of a fire to make a "corncake" which traveled easier to work in the fields, but was lacking in nutrition.
