The last mention of Joseph is when Jesus, at roughly 12 years of age, was found in the Temple, discussing things with the elders. There is no mention of Joseph when Jesus began His ministry at about 30 years of age. It was normal, in those days, for a husband to be significantly older than the wife, so we may presume that Joseph had died by the time Jesus had reached adulthood. As for Mary, John 19:25-27 records that Jesus asked John to take care of His mother, Mary. Whether or not Jesus said these words is unimportant; they may reflect that, when the Gospel was written, John was in fact caring for Mary.
In the synoptic gospels (Matthew, Mark and Luke), Mary watched from afar off. In John's Gospel, she stood at the foot of the cross with the 'disciple whom Jesus loved' (often thought to have been the disciple John), and Jesus told the disciple to look after Mary as if she were his own mother.
The first gospel to be written, now attributed to the apostle Mark, originally ended at 16:8 when the young man told the three women that Jesus was risen and they fled in terror, telling no one. This gives us no guidance as to what happened next, except that the women really did not tell the disciples. The 'Long Ending' (verses 16:9-20) was added much later and says that early the same day, Jesus appeared to Mary Magdalene. It was only after this that Mary told the disciiples.
Matthew's Gospel says that the two women ran straight back to tell the disciples, meeting Jesus on their way. He told them to say to the disciples to go immediately to Galilee, where he would meet them. No more is said about Mary Magdalene or the other Mary.
Luke's Gospel says that a group of women went to the sepulchre and were told that Jesus was risen. They all returned and told the disciples, without ever seeing Jesus. No more is said of the women in this gospel.
John's Gospel says that Mary Magdalene went to the tomb and simply saw that it was empty. She ran to tell Peter and the other disciple, who then ran back to the tomb. After the disciples had departed, Mary Magdalene was suddenly back at the tomb, where she saw Jesus, who she thought was the gardener.

We simply do not know what happened to Mary after the death of Jesus.
