After they caught Bilbo, the dwarves came looking for him. As they got around the fire the trolls popped a sack over their heads. It all started when they caught Bilbo. As they were questioning him, Balin came in, quite unsuspecting of anything. The trolls jumped him before he knew what's what. Then they hid behind the trees out of the light and waited for the other dwarves, who they promptly caught in a sack.

Well, as the three trolls were debating how to cook their supper, Gandalf came along and kept them arguing and fighting about whether to stew, jelly, roast, or boil the dwarves until dawn. When the first rays of sunlight touched the trolls, they turned to stone.

Which trolls? The cave trolls at the beginning wanted to eat Bilbo and Company. The stone tolls later on where playing ball during the thunderstorm when Bilbo and Co. were trying to pass through the Misty Mountains. Stone trolls aren't very good shots and were using huge boulders, making the passage very dangerous for 13 dwarves, a hobbit, and a man-sized wizard.

Unlike the trolls in 'LOTR', the trolls in The Hobbit were used for comic relief. The Hobbit is, after all, a childen's story - Tolkien wrote it originally for his own kids, and the troll episode was their favourite part of the whole tale. The idea was trolls could speak a debased form of 'westron' (the 'common tongue'), so Tolkien represented that in English through a Cockney dialect, which in his opinion was probably 'common'.
