Probably nothing but if it's syncing then all the information will be lost.
You have to use iTunes to eject the iPod. There is no option to eject the iPod on the iPod screen. It only flashes "DO NOT DISCONNECT" Or you could force an eject from the computer's tool bar.
I sometimes use my mom's iPod, I don't really like them, but I've accidentally forgotten to eject the iPod, and nothing really happens to it. You can eject your ipod like a usb drive or when it is done syncing it and it beings to charge you may hit the x under the name of the ipod and it will eject it.
To eject and ipod from a computer, look to the left hand side of the itunes screen and you will see a tiny picture of your ipod. To the right of that, there is a little arrow lookin' button. Hit that and your ipod will eject.
Eject it from the computer. After you eject the iPod 'drive' from the computer, it should no longer say 'Do Not Disconnect'.

Eject before disconnecting iPod means that iTunes is checking to be sure that it has finished using the iPod. It also checks to make sure no other program is using the iPod as well to prevent any corruption of files.
Eject the iPod then it should still be charging then press then press menu then you can listen to your iPod while its charging.
When your iPod is connected to a computer and you have not yet ejected it, it will say do not disconnect on the iPod. Do not disconnect it until you have clicked eject on your computer, or it could have a problem with it.
this will be because you have disk use enabled, which this is selected you have to manually eject your ipod each time (hit the eject button in itunes by your ipod on the left) or turn disk use off this option is available by clickon on your ipod(on the left) and then un ticking the enable disk use button.
Just click "Eject" (the little arrow doodad beside your iPod on the computer) and unplug it. If you charge your iPod in anything else, just unplug it.
it is different on all computers but there is a button on the bottom right hand corner (all computers) that when you put your mouse over it. It says safely remove hard ware or something like that and you click on that choose to dissconnet Apple ipod :)
