That depends on what you tell iTunes to do. If you check the "manually sync music" box, then nothing happens until you tell it to. Nothing will change what's on your iPhone. Same with apps. Same with videos. Go into the iPhone's icon (left hand bar in iTunes) select a tab on top (for the things you want to control) and check the appropriate boxes.

Well, to install iTunes on your computer you don't have to use your iPhone. You just go to the Apple website, and search iTunes, and then you can just download it from there. If you want to sync your iPhone with iTunes to back up your content, you just sign in with your Apple ID (if you have an iPhone you should already have one), then plug in your iPhone and press sync.

I had this problem too. I had iTunes installed already, but when I tried to sync my iPhone, nothing came up on my iPhone screen. I quit iTunes, and unplugged my iPhone, then plugged it back in and opened iTunes again.
You have to Sync it with iTunes.
