Yeast is a living organism. When it consumes sugars (found in bread), the yeast produce carbon dioxide gas as a by-product. The air pockets in bread which are responsible for it "rising" are due to the production of CO2 gas by the yeast inside the bread. When you bake the bread, you kill all of the yeast and are left with fluffy leavened bread!
