Sorry I could not find much info but I found out that meat like beef is one major cause for greenhouse gases, due to the amount of livestock needed for the amount of meat needed by the people.
I would say in my opinion that beef has opened the food spectrum a lot more. Many people are coming up with more ideas and ways to serve cow. But I also think it has brought a lot more vegetarians and vegans into the world because they start to think it's cruel when killing a cow.
