The perception that Irish Food,whether it is traditional or modern,
consists solely of bacon and cabbage really is so far off the mark.
Yes certainly there are lamb and mutton stews, boiled pork, creamy salted butter, rich cheeses and the ever-present potato.
Simple meat dishes with minimal sauces that make use of Ireland's quality beef, lamb and pork produce are still there and rightly so.
However Irish Food is changing somewhat as Ireland enjoys financial prosperity and the influence of new cultures.
Modern Irish cuisine really is an eclectic mix,as you will discover with the recipes from these modern Irish chefs such as Darina Allen, Paul and Jeanne Rankin, Rachel Allen, Kevin Dundon, Richard Corrigan,Clodagh McKenna have been updating Irish ingredients with a global influence.
That is not to say however that they do not pay homage to traditional Irish recipes. They certainly do!
