All good and healthy foods are permitted. The only foods not permitted are harmful things. They are: Pork, blood, what is found already dead (with the exception of fish), what has been dedicated to idols, and carnivorous animals (like tigers and other meat-eating animals). Pork is prohibited not because of the trichinosis worm. It is more than that. Pig meat is and always will be harmful to people - perhaps not physically as much as spiritually. It affects people who eat it in a negative spiritual manner, somehow.

The proper manner of slaughtering an animal is to say: "In the name of God" and then cut the jugular vein with a very sharp knife. That way, the animal feels very little pain and the heart keeps pumping most of the blood out of it's body. In essence the animal simply looses conciousness - it falls asleep from lack of blood. This is the method prescribed by Jewish Law, as well.
