1921 is an extremely common date for Morgans, so the value is mainly for its silver content. At present, it's worth about $24. You might be able to get a little more for it being that it's a '21-S.
While the colorization might appeal to a select market, the defacement of the coin destroys any and all collector value, so the only remaining value is that for the silver content. As of 2 March 2013, a 1921 Morgan dollar is worth $22.

The is no 1921S Peace dollar; Peace dollars were not produced in San Francisco ("S" mintmark) in 1921. If your 1921 dollar coin is a Peace dollar, it was produced in Philadelphia and has no mintmark; if it has an "S" mintmark, it is a Morgan dollar produced in San Francisco).
