There are actually four bounty hunters shown in the Star Wars Movies.

By order of appearance, there was Greedo in Star Wars Episode IV: A New Hope. He encounters Han Solo at the cantina in Mos Eisliy after being hired by Jabba the Hut to collect Han's debt.

The next appearance is by Boba Fett in The Empire Strikes Back and Return of the Jedi. Again Jabba has sent someone to collect from Han Solo, this time only to return with the Millenium Falcon pilot himself after he is frozen in carbonite by Lando Calrissian's people for Darth Vader on Cloud City. We see Boba Fett again as a child in Attack of the Clones where the young Obi-Wan Kenobi meets him on Kamino.

The third is the shape shifter Zam Wesell, who is hired to assassinate Senator (Princess) Padmé Amidala. When two attempts are foiled by the Jedi initiate Anakin Skywalker, and Obi-Wan and Qui-Gon Jinn, Jengo Fett kills Wesell with a poison dart.

The final (first--well third--by the story's chronologically) is Boba Fett's "father" Jango Fett Jango was selected by either Count Dooku or the Jedi master Sifo-Dyas as the template for the clone army produced by the Kamino cloners. He serves as Dooku's body guard and is later hired by Viceroy Nute Gungray for the assassination attempt against Amidala. Boba is actually an unaltered clone of Jango, and when he sees his "father" decapitated on Geonosis by Jedi Master Windu, it seems to set Boba's resolve to become the most notorious bounty hunter in the galaxy.

So, four bounty hunters:

1. Greedo (killed by Han Solo in Mos Eisley, Tatooine)
2. Jango Fett (killed by Master Windu in the Battle of Geonosis)
3. Zam Wesell (killed by Jango Fett on Coruscant)
4. Boba Fett (who may or may not have died when Han Solo ignites his rocket pack, launching him into the mouth of the sarlacc on Tatooine).
