wash the scallops thoroughly to get rid of their juices, pat dry, remove the coral (orange fin) and the very thin film and large connection around the side of the scallop, season well, maybe use some five spice to for a kick, heat a pan with a little butter in it, place the scallops in around 2 minutes each side until crisp and caramel colour, if you are really unsure, cut open the scallop as raw scallop has a more grey than white colour unlike cooked scallops which lighten in colour

I find Manx Scallops the best fished around the Isle of Man. They are sweet and juicy and also fished in a sustainable way. I like them with butter, chirizo sausage, chillie, galric and paprika. To make shrimp scampi, you saute the desired amount of shrimp in butter with shallots, garlic and red pepper flakes. Once the shrimp are cooked through, remove them from the pan. Add more butter to the pan with dry white wine and lemon juice to make the sauce. Put the shrimp on top of some cooked pasta and drizzle with the sauce.
