Actually, I once had a Muslim over, and we served what we would serve to normal guests. There is no call to try to make someone eat the foods they have all the time. Just serve a regular meal. Try stir fry with chow mein.
Do not serve pork or any part of a pig. There are strict dietary laws. Most Muslims are likely to 'bend' them not to cause a scene, but you can make them a lot more comfortable if you check with them regarding what they will and will not eat. Just the fact that you asked ("Hey, when we have you over, any food issues we should be aware of?") will enable you to have a better understanding of their culture and religion.

I don't think the menu matters as much as making sure that it's organic vegan food. Muslims aren't vegan, but most Hindus are. By being certain that the food is organic, there's no chance of it being grown with animal products that may be considered "haram" to the Muslim.
