This is a bit of a palaver, but delicious and well worth the effort:
Get two to three chicken thighs per diner. Remove skin and bones.
Make a salsa from fresh flat parsley, fresh coriander, diced capers, garlic and chopped anchovies. Season with black pepper, a pinch of salt (careful, as both anchovies and capers bring in salt already), a little ground nutmeg. Add a splash of lime juice and a splash of olive oil.
Make little roulades by rolling each of the thighs around a spoon full of the salsa, then roll this in pancetta and secure with skewers or kitchen twine.
Fry the roulades in a frying pan until golden, then transfer to a lightly oiled baking dish and finish in the oven at 180 degrees for 30 minutes.
Meanwhile, clean and dehydrate the mushrooms. To dehydrate mushrooms, bring them to high heat in a non-sticking frying pan, no fat or salt added, stirring occasionally. Just get the excess water out thus concentrate the flavor.
Deglaze the pan in which the roulades were fried with a good amount of butter, a sprinkle of flour and wine. I usually use Marsalla (an Italian fortified wine), but Sherry would also work, or even a dry white wine. Just before serving, add the mushrooms and season to taste.
This is best served with fresh white sourdough bread, or egg fettuccine tossed in sage-infused butter.
