Cabbage soup is simple, tasty and can be made with or without meat, making it a good choice for vegetarians. Shred the cabbage and drop into boiling water or broth to cover. Then add vegetables such as chopped onions, celery, green peppers, carrots and mushrooms. I like to also include lots of garlic and fresh green beans.
