Blackberry Cobbler

INGREDIENTS 1 cup butter or margarine, divided 1 cup sugar 1 cup water 1 1/2 cups self-rising flour* 1/3 cup milk, room temperature 2 cups fresh or frozen blackberries 1/2 teaspoon ground cinnamon 2 tablespoons sugar

DIRECTIONS In a 10-in. round or oval baking dish, melt 1/2 cup butter; set aside. In a saucepan, heat sugar and water until sugar melts; set aside. Place flour in a mixing bowl; cut in remaining butter until fine crumbs form. Add milk, stirring with a fork until dough leaves sides of bowl. Turn out onto a floured surface; knead three or four times. Roll out to an 11-in. x 9-in. rectangle 1/4 in. thick. Spread berries over dough; sprinkle with cinnamon. Roll up, jelly-roll style. Cut into 1/4-in. thick slices. Carefully lay slices in baking dish over butter. Pour sugar syrup around slices (syrup will be absorbed). Bake at 350 degrees F for 45 minutes. Sprinkle sugar over top and bake 15 minutes more. Serve warm or cold. (*If self-rising flour is not available, use 1-1/2 cups all-purpose flour plus 1/4 teaspoon salt and 2-1/4 teaspoons baking powder.)

Bisquick makes it super easy to make a cobbler. I believe the proportions are:

1 cup Bisquick
1 cup sugar
1 cup milk
1/2 stick butter
cinnamon or other baking spice

4-6 ripe peaches depending on size

Chop up peaches, toss with cinnamon or other baking spice spice you like, then put in the bottom of a greased baking pan.

Mix Bisquick together with milk, sugar and melted butter and pour over the peaches.

Bake in a preheated 375 degree oven for about 30-40 minutes.

You can add blueberries or other berries to the peaches to add variety.

Here's a homemade peach cobbler recipe. Its called Dutch Oven Peach Cobbler:

Ingredients : can of sliced peaches, a package of yellow or white cake mix and ¼ pound butter.

Start by preparing 35 pieces of charcoal. Next, rub the inner portion of the oven with vegetable oil or olive oil and arrange eight pieces of charcoal at the bottom of the oven and 20 pieces at the top.Now, put the fruits in the oven and sprinkle the cake mix on top of the fruits. Slice the butter into several portions. You need to sprinkle ¼ teaspoon of cinnamon in the dessert. Cover the oven. Bake the dessert for about 40 minutes. Add charcoal and bake for another ten minutes. Next, remove from the oven and cut into bite size pieces. Serve once done.

Here is a good apple cobbler recipe from the Land O'Lakes website:

7 to 8 large cooking apples (9 cups), peeled, cored, sliced 1/4 inch

3/4 cup sugar

3/4 tsp. ground cinnamon

2 cups all-purpose flour

2 cups sugar

2 eggs

2 tsp. baking powder

3/4 tsp. salt

2/3 cup butter (this recipe calls for Land O'Lakes brand, of course)

Ice cream (if desired)

Heat oven to 350 degrees F.

Place sliced apples in ungreased 13x9 inch baking pan.

Combine 3/4 cup sugar and 1/2 tsp. cinnamon (not entire amt. above) in bowl; sprinkle over apples.

Combine remaining cinnamon, flour, sugar, eggs, baking powder, and salt in small bowl; beat at medium speed until mixture resembles coarse crumbs. Sprinkle over apples. Pour melted butter over topping. Bake 45-55 minutes or until lightly browned and and apples are tender.

Serve warm (with ice cream, if desired).
