It's a color of a horse (usually Paints). Native Americans thought it was special because they thought that the horse with the Medicine Hat color protected it's rider. There's a book called San Domingo: The Medicine Hat Stallion by Marguerite Henry that describes the power of the Medicine Hat colored horse and how it protects it's rider.
