Here is a personal favorite that can be tweaked to suit the taste of your guests due to the optional ingredients and the choice of ingredients. 2 cups chopped lettuce 1 cup grated cucumber 1/4 cup thinly sliced red onion 2 tbsp tzatziki 2 tbsp fresh chopped parsley 1 cup chopped fresh tomato 2 cups cooked shredded chicken Greek salad dressing 4 warm tortillas Combine lettuce, cucumber and red onion in a bowl. Spoon in tzatziki, toss gently, add parsley and cover. Divide the shredded chicken among the warm tortillas, top with the lettuce mixture and tomatoes, add salad dressing and roll to serve.
