Corn Bread
1 1/2 cups flour
1 cup corn meal
1/4 cup sugar
4 tsp. baking powder
1/2 tsp. salt
1 egg
1 1/4 cups cup milk
1/4 cup margarine
Sift dry ingredients. Add egg, milk and margarine. Beat at low speed for one minute. Bake in greased 8 by 8 inch pan in 425 degree oven for 20-25 minutes.

2 eggs

3/4 cup flour
4 tsp baking powder
Yellow corn meal to form a batter
Beat the eggs well, add the salt, milk, and sugar. Stir in flour and baking powder; blend in enough corn meal to form a soft batter. Usually about 2 cups. Bake in shallow, well greased pan at 350 degrees for 30 minutes.

1 cup all purpose flour
1 cup self-rising yellow cornmeal
1/2 cup sugar
1/4 cup packed light brown sugar
1/2 tea. salt
2 eggs
1/4 cup butter or margarine, melted
1 cup buttermilk
Note: I have added grated cheddar,diced jalapenos, and/or cayenne
Mix all dry ingredients in one bowl. Mix all wet ingredients in another. Add wet to dry, and stir just to combine. (**DO NOT BEAT BATTER OR OVER MIX, RESULTS IN TOUGH, FUNNY-LOOKING MUFFINS) Put in greased muffin tins. Cook at 350 until done, about 20-25 min.
