A service is a system process that runs independent of any program. Some services run automatically, such as the DNS client service that translates the domain you type into your browser into an IP address to fetch the webpage from, other services only start when activated by a program that uses that service, such as the HTTP SSL service that activates to secure your end of the link when you go to a secured website.
