If you right-click on the mouse or hit the shortcut menu key on your keyboard, a menu appears with common commands that are used or are relevant at the time depending on what you are doing. This menu is known as a shortcut menu.

Create a shortcut key by right clicking on the excel icon on the desktop or from the folder menu and click properties. Define your shortcut key. Can do from the keyboard once this is done.
It is a menu with items that are relevant to what you are doing at that time. Shortcut menus from a right click on your mouse or the shortcut menu key on your keyboard normally show items that are relevant to what you are working in. In other words they are giving you options based on the context of your work.
Right click on the worksheet's tab, which will give you a shortcut menu with the option to rename it.

There is no shortcut key to do this, but you can press Alt + W + F + F in Excel 2007 to access menu options to toggle between freeze and unfreeze panes. (I do not remember if this same sequence works with Excel 2003; you might just have to press F one time in Excel 2003.)
