"Brick" is not a kind of cheese, it is a form of cheese. Brick cheeses include but are not limited to cheddar, jack and mozzarella. The only form I would substitute brick cheese with is cheese curd because of moisture content.

a substitute for farmer cheese is goat cheese made from goat milk.... don't ask me my lil sisters dad has a farm and made it and i was just listening to her wonderful stories now dont u think im lieing i repete i am not i will never lie to the internet believe me do you like goat cheese u can buy it at loacal grocery stores
