If you create a company and get it all legal and all you do is sell lemonade on the side of the road you will not make much money, but you will be the CEO.
Same in the kitchen. If you become a chef de cuisine in a restaurnt for a 4 star hotel with about 400 rooms. Lets say they have about 20 hotels in the company you might make 40-50k. If you get the same job in hotel with 1000 rooms with 100 hotels in the company you can get 60k-70k. It is essentially the same Jon on a larger scale for a larger company.
Bigger companies can pay bigger salaries. Also where you go makes a difference. A line cook in LV can start at $15 an hour where as a line cook in Kansas will start at $10. Where you go also makes a big difference.
