On an abdominal ultrasound scan, the machine can produce images of liquids and soft tissues pretty well, but hard tissues like bone and air pockets do not produce images. To have a pancreas be obscured by bowel gas means a loop of intestines had a pocket of gas in it that was between the probe and the pancreas, so the pancreas could not be evaluated by the ultrasound.

There is no disease or pathology present, just the intestines getting in the way of the scan of the pancreas.

This could occur with an unusually large accumulation of gas in the small intestines. The pancreas sits between two loops of the proximal (near the stomach) end of the small intestines, so if they small intestines become filled with gas, you wouldn't be able to see the pancreas.
