A hydroxyl group is removed from one molecule, a hydrogen atom from another molecule, and the two molecules are joined together to form a larger molecule. The OH and H combine together to form a water molecule.
Therefore, dehydration synthesis involves removing a water molecule from two molecules (dehydration) in order to form a larger molecule (synthesis).
This can be seen in many polymerization reactions, such as in forming a polypeptide from several amino acids.
In this particular case, the OH is removed from the carboxyl group of one amino acid, and an H is removed from the amino group of another amino acid. The two amino acids are joined together in a dipeptide bond, and a water molecule is formed from the OH and H that were removed.
