You're talking about lines of video resolution, or generally, the amount of picture detail.
Of course a 1080 (I or P) is going to offer greater detail, but you also need to keep in mind the original picture source and the system used by which it was recorded.
1080p is a higher resolution than 720p but it's not a format that is broadcast at present. Because it has a higher resolution, it also requires twice the bandwidth to deliver the signal. 1080p is largely restricted to local sources such as Bluray discs and game consoles.

The PS3 will upscale to 1080P if the system is set to upscale. You will not get 1080p you will get 720P upscaled to 1080P. I find that DVDs movies are better on the upscaled format, but they are not of the quality of Blu Ray.
