"can not", is more colloquial than cannot, and typically is not good to use in more sophisticated settings. Both words, however, are correct forms of the word. Most of the best writers all over the world prefer to use 'CANNOT'. So, if confused, then save your skin by using "CAN'T"!! But if you are living in a non-English speaking country where pure(?) grammar is meticulously and conventionally used, the so-called purists may frown upon your ''CAN'T''.
There are certain situations where "CAN NOT" must be used. For example,
"Jane CAN NOT only sing, but also dance". Here CANNOT may cause confusion.
'CANNOT' is also used to say something emphatically as in, "You CAN NOT move an inch without my permission".
