Fiji cuisine is a very original and complex one. Desserts come in different ways, either they are made like fruit salads having very many shapes and forms or made as cooked dishes. Many types of ingredients are used when preparing traditional Fiji desserts. Cassava pudding for instance is made with peeled and grated fresh cassava, shredded coconut, and root ginger and lightly crushed cloves. As a topping one can always use whipped cream. Cakes with banana and cassavas are a real delight to one senses. The main ingredients in these kinds of cakes are mashed banana's, fresh cassavas and a lot of coconut cream.
A great one is a Fijan Honey Cake
2 1/2 cups all-purpose flour
1 cup sugar
1 cup sour cream
1 cup honey
2 eggs
2 tablespoons vegetable oil
1 teaspoon baking powder
1 1/2 teaspoon pumpkin pie spice
2 tablespoons sliced almonds
Preheat oven to 350 F. Coat 2 9x5 loaf pans with non-stick cooking spray. In a large bowl combine all ingredients except the almonds and beat until well blended. Pour the batter equally into the loaf pans and sprinkle each with the almonds.
Bake for 45 - 55 minutes or until a wooden toothpick inserted in the center comes out clean. Allow to cool for 10 minutes then remove to wire rack to cool completely.

His Dad is Fijian..Manoa Thompson and his Mum is an Aussie. He has the best of both country's that is a Fijian's flamboyance on the field of play and his choice of sport is definitely from his mother's side. He gets his skill from his fijian father who was also a league player in his time and if it wasn't for Jarryd's inclusion and participation as a Fijian Bati in the World Cup of 08 he would not be the best league player that he is today. He certainly does not look like a Fijian but the way he plays is a Fijian trademark...many thanks and credit should be awarded to his Mother Jodie who stood by Jarryd and whose surname Jarryd uses that is Haynes....and who has always been young Jarryd Hayne's rock. As a Fijian JH has really made us proud. All the best Jarryd! Jarryd Hayne is a Cikobian. Cikobia is an island in Fiji.
