I believe that one answer to this question is genetic engineering is a method of modifying plants or animals through modification of their genetic material to add new traits that are useful for food produced from these plants or animals. I have submitted a link for the wikipedia entry describing this in more detail. In general, the genetic engineering causes changes in an organisms genetic code, thereby introducing new genetically controlled mechanisms into the cells making up the organism. The result of these new mechanisms may be useful to reduce common problems in the agricultural industry, like lowering a plants susceptibility to drought-like conditions, allowing a plant to utilize brackish water, or allowing tomatoes to not decay as quickly after removal from the plant. For certain organisms, this modified genetic code is passed onto offspring.
