Artificial flavor is what is added into candy to make the taste better and stronger. It can be anything from natural juice of that flavor (fruit juice, for example), extarct from the flavor (licorice extract, for example), to citric acid which enhances the taste of sour or tart candies.

Artificial flavors are often made out of substances called esters. These are organic molecules that combine a carboxylic acid (organic acid) with another organic molecule. The reason why these are important to flavoring is because the chemoreceptors (on taste buds) on the tongue bind with various chemicals to produce the sensation of taste. In the case of various fruits flavors, natural fruits produce all sorts of esters, which our taste buds can differentiate. We detect taste as an evolutionary trait to ensure that we are attracted to substances that are nutritive to us.

Therefore, it just so happens that, by adding those very esters to foods, we can replicate those specific fruit tastes in the foods.
